In a food processor / blender (or in a large bowl) mix the vegetable oil with the bananas, egg, melted butter (cooled) & vanilla essence.

Put this mixture in a large bowl.

Using as little mixing as possible, add the dry ingredients to the wet ingredients along with half a cup of crushed walnuts.

Try to incorporate the ingredients with as little mixing as possible as over-working the batter leads to tougher muffins.

Place into muffin cases in a muffin tin and bake in a preheated oven for approx 15 minutes at 180 degrees.

This makes approx 6 large muffins but you can make smaller ones if you prefer, which would yield approx 9-12 muffins.
