Preheat oven to 325 F. Grease a 12-cup muffin tin and set it aside.

Mix the turbinado sugar and 1/2 teaspoon of cinnamon together in a small bowl. Set aside.

In a small bowl combine flour, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.

In a medium bowl combine the coconut oil with the brown sugar. Then add the egg and stir till well blended. Add the mashed bananas to this mixture. (I'll often just peel and cut them in slices and mash them right into this mixture.)

Add the flour mixture into the banana mixture. Stir until just blended.

Pour batter into muffin cups. Sprinkle generously with the cinnamon sugar mixture. Bake at 325 F for 18 to 20 minutes.

You could use half regular white flour and half whole wheat flour if you don't have the white whole wheat flour on hand.
