Preheat oven to 325u00b0F. Spray a loaf baking dish with nonstick spray.

In a medium bowl, combine mashed bananas, eggs, butter, sugar and extract. Mix thoroughly, then add dry ingredients: flour, baking powder, salt and cinnamon. Mix until combined then stir in chopped walnuts.

Pour batter into the baking dish.

Now make streusel topping. Combine flour, butter and sugar until crumbly. Sprinkle on top of the batter. Bake for 1 hour to 1 hour and 10 minutes.

Allow to cool before slicing.

Cook's note: This recipe can be made without the streusel topping as well. Also, if you don't have the banana extract, no biggie. This will still taste wonderful without it.
