Whisk 6 cups heavy cream and 4 tsp vanilla extract until stiff then spread over bananas and cut cake into 18 pieces. Whip remaining heavy cream and vanilla extract then transfer to a piping bag and decorate the edges of each cake to form a rim. Spread eggnog inside rim and chill for 45 mins.
