Preheat oven to 350u00b0. Grease two (2) loaf pans, or muffin tins. Mix together dry ingredients: flour, baking powder and salt, and set aside. Using a mixer, combine the sugar and butter until well blended; then mix in the egg. Add the bananas, milk and zest, mix well. Slowly add the dry ingredients and beat until smooth. If adding nuts or chips, do so at this point.

Portion our the batter into the loaf pans, half in one pan, half of the batter into the second. They might seem like they are filled low, but they will rise considerably. (Factor this in if you are doing muffins).

Put pans in oven and bake for 45-55 minutes. Top will get golden brown. Cake is done when tester comes out dry and clean.
