1/8 tsp Pepper
5 x Strips bacon
2 Tbsp. Water
16 ounce Canned plum tomatoes, cut into bite-size pcs
1 x Clove garlic, chopped
1 med Onion, sliced and separated into rings
1 Tbsp. Butter
1 dsh Grnd red pepper
1 med Lemon, thinly sliced

Rub the fish with salt and pepper.

In a roasting pan, lay the fish atop bacon strips.

Add in the water.

Bake in a 400 oven for 10 min.

Drain tomatoes, reserving juice.

In a skillet, cook tomatoes, garlic, and onion in butter until onion is just tender.

Add in the red pepper and reserved tomato juice.

Bring to boiling; pour over fish in pan.

Reduce the oven to 325 .

Lay the lemon slices over the fish to cover.

Bake, uncovered, for 40 to 45 min or possibly until the fish flakes.
