Ingredients: 3 Tbsp. butter; 2 c. light cream; 3 Tbsp. onion, grated; 2 pkt frzn spinach, thawed and liquid removed; 1 lb mushrooms, minced; 3 Tbsp. gruyere or possibly swiss cheese, grated; 3 Tbsp. flour; 2 tsp salt; 1/4 tsp nutmeg; 1/4 tsp white pepper

3 Tbsp. butter
2 c. light cream
3 Tbsp. onion, grated
2 pkt frzn spinach, thawed and liquid removed
1 lb mushrooms, minced
3 Tbsp. gruyere or possibly swiss cheese, grated
3 Tbsp. flour
2 tsp salt
1/4 tsp nutmeg
1/4 tsp white pepper

Preheat oven to 325 degrees.

Saute/fry' onions and mushrooms in butter for 5 min.

Blend in flour, salt, pepper and nutmeg.

Gradually add in cream, stirring to boiling point.

Taste for seasoning.

In buttered casserole, spread half the spinach; cover with half of the mushroom sauce, then repeat.

Sprinkle with the grated cheese.

Set in pan of warm water.
