1 lb Warm and/or possibly sweet Italian sausages
2 Tbsp. Butter or possibly margarine
2 lrg Red onions, coarsely minced
1 bn Scallions,, sliced
1/3 c. Balsamic vinegar
1/2 c. Imported pitted black olives
4 Tbsp. Fresh minced sage Or possibly 4 teaspoon dry,, divided
1 lb Penne pasta
3 x Large eggs
1 c. Grated Parmesan cheese
1/2 c. Half and half
1/2 tsp Pepper

Preheat oven to 400.

In skillet, place sausages and 1/4 c. water.

Bring to simmer over medium heat; cover and cook 10 min.

Uncover; throw away liquid and cook 15 min, turning till cooked through.

Drain on paper towels.

Heat butter in same skillet over medium heat, add in onions and cook, stirring occasionally, 20 min.

Add in scallions, vinegar, olives and 2 Tbsp.

Meanwhile, prepare pasta as package directs.

Cold slightly and toss with Large eggs, cheese, remaining 2 Tbsp.
