1 x Wild goose
3 doz prunes Chicken broth
1 x Onion, minced
1/2 stk butter
1 c. Soft bread crumbs
1/2 lb Sausage
1 x Egg Salt and pepper to taste
1/2 tsp Sage
1 Tbsp. Chopped parsley
3 c. Chicken broth
4 Tbsp. Goose drippings
1 Tbsp. Each wine, brandy & gin Flour to thicken

Cover prunes with chicken broth.

Cook till tender.

Drain and remove seeds from prunes.

Saute/fry onion in butter.

Cook sausage, drain and crumble.

Combine all ingredients and stuff goose.

Run goose with oil and bake at 350 for 3-4 hrs or possibly till tender.

Baste occasionally with drippings.

SAUCE: Boil stock down to 2 c.. Add in remaining ingredients, except flour.
