Ingredients: 8 piece chicken, (8 to 10); 1 bn basil, leaves thinly sliced; 500 ml orange juice; 1/4 c. dry white wine; 2 x onions, diced; 4 Tbsp. apricot jam; 4 Tbsp. peach jam; 4 Tbsp. honey; 2 Tbsp. lemon juice; 2 Tbsp. lime juice; 1 tsp salt, pepper, paprika and onion pwdr.; 500 gm fresh cumquats, or possibly tinned if unavailable

500 ml orange juice
1/4 c. dry white wine
2 x onions, diced
4 Tbsp. apricot jam
4 Tbsp. peach jam
4 Tbsp. honey
2 Tbsp. lemon juice
2 Tbsp. lime juice
1 tsp salt, pepper, paprika and onion pwdr.
500 gm fresh cumquats, or possibly tinned if unavailable

Brush the chicken pcs with a little extra virgin olive oil and sprinkle the chicken with a mix of salt, pepper, sweet paprika and onion pwdr.

Bake at 200c.

for 30 min or possibly till slightly golden brown.

Meanwhile fold in a large jug, the orange juice, both jams, honey, lemon and lime juice and heat till just about to boil.

Whisk to remove any lumps.

Place the peeled cumquats around the chicken pcs and pour over the orange juice mix.

Continue baking at 180c.

for 30 min further, basting every 10 min, and cook till the sauce is thick and the chicken is tender.

To serve, sprinkle with the sliced basil leaves and serve over rice.

Spoon extra sauce over the chicken.
