1 pound Penne Pasta
1 Tablespoon Olive Oil
6 Tablespoons Butter
2 cloves Garlic
1/2 cups Flour
6 cups Milk
1 teaspoon Salt
1 teaspoon Pepper
2 cups Monterey Jack Cheese, Shredded
1- 1/2 cup Parmesan Cheese. Shredded, Divided
1/2 cups Oven Roasted Tomatoes
4 cups Cooked Chicken, Cubed

Drain, rinse with water and set aside in large pot or bowl.

In a large saute pan, add olive oil, butter and garlic over low heat.

Saute just until the garlic becomes fragrant.

Continue whisking over medium heat until mixture begins to thicken.
