Preheat the oven to 350u00b0F. Lightly grease a medium baking dish.

Cut an X in the bottom of each head of endive. Cook in a saucepan of simmering, salted water for 10-15 mins, until tender. Drain and set aside.

Meanwhile, for the cheese sauce, melt 2 tbsp of the butter in a small saucepan on low heat. Add the flour and cook for 3 mins, stirring. Remove from the heat. Stir in the milk. Simmer on medium heat for 10 mins, stirring occasionally, until thickened. Stir in 1 cup of the cheese and the nutmeg. Season.

Wrap a slice of ham around each endive and place in the prepared dish. Cover with the sauce and sprinkle with remaining 1/2 cup cheese. Drizzle with the remaining 1 tbsp butter, melted. Bake for 15 mins, until golden.
