Mix all ingredients together to stiff dough. Hence variance in water quantity.

Kneed dough for 10 minutes.

Cut in to 8 balls and rest for 10-20 minutes.

Form bagel shape by punching central hole with thumb and gently pulling to donut shape.

Pre heat oven to 220C

Rest bagels for 20 minutes.

Drop bagels into boiling water for 2 minutes. Boil them 1 or 2 at a time so as not to crowd. Bagels will sink and then rise to surface. They will look a bit weird and warty. Take out and allow to dry for a few minutes.

Put bagels onto lightly oiled baking tray and bake for 10 minutes on each side.

Allow to cool for 20 minutes.

You can add other ingredients such as fried onions into the initial mixture or dust with poppy/sesame seeds before baking.
