1 cup Whole Milk
4 Tablespoons Butter, Divided Use
6 ounces, weight Processed Cheese (Velveeta Or Similar), Cubed

1/4 teaspoons Cayenne Pepper
1/4 teaspoons White Pepper
1 whole Jalapeno Pepper, Stem Removed
1/2 cups Italian Bread Crumbs

In a pan fry bacon over medium heat until crispy.

Remove from the pan and let cool on paper towels, then crumble into small peices.

Follow directions on package to cook macaroni.

Once done drain water and return macaroni to pan.

Add milk, 3 tablespoons butter, cheeses (Velveeta and Mexican blend), and spices to pan.

Cook on low heat.

In a separate pan heat 1 tablespoon butter.

Remove stem and seeds from jalapeno.

Add to pan and saute until tender.

Remove from heat and set a side.

5.Heat oven to 350 degrees F. Once all cheese is melted into the macaroni remove from heat.

Place 6 ramekins onto a baking sheet, divide macaroni between the ramekins.

Top each with jalapeno and bacon peices.

In a bowl combine bread crumbs and cojita cheese.

Sprinkle mixture over each of the ramekins.

Bake in oven for about 10-12 minutes until golden brown.

Remove from oven and cool before serving.
