Preheat oven to 400u00b0F. Place potato wedges in a large roasting pan. Toss with 1 tbsp oil, season to taste and bake for 30-35 mins until cooked through and golden.

Meanwhile, mix mayonnaise, roasted pepper, lemon zest and Dijon mustard. Season to taste. Chill.

For the burgers, mix ground beef, onion, breadcrumbs, wholegrain mustard, beaten egg and 4 tbsp water. Season. Form into 4 burger patties. Heat remaining oil in a large frying pan and cook burgers for 7-8 mins on each side. Place 1 slice of cheese on each burger 1 min before burgers are finished cooking. Cover and allow to melt.

Meanwhile, cook bacon until crispy. Spread buns with pepper mayo and top with lettuce, tomato, red onion and bacon. Add burgers. Serve with potato wedges and ketchup, if desired.
