   In a saucepan, melt the butter over a low heat.

   Stir in the flour and cook briefly.

   Remove from the heat and add the milk, stirring until smooth.

   Return to a low heat and stir continuously, until the sauce thickens.

   Add the cheese, stirring well.

   Finally, add the potato and chicken and stir until warmed through.
