   rub brisket with choice of rub

   set in refrigerator over night

   inject brisket with one can of beef stock right before smoking

   cook brisket to 160 (around 3-4 hours)

   place brisket in aluminum pan

   inject with remaining can of beef stock and add apple juice to pan

   cover with aluminum foil and cook to 200 (around 4-6 hours)
