Avocado Sauce with Potatoes

   Peel the skin off of the potatoes and cut into bite-sized pieces and soak in water.

   Finely chop the onion.

   Cut the avocado into half and peel the skin.

   Boil the potatoes.

   Pour enough water to cover the potatoes in the pan and heat up.

   Add salt to it.

   Prick the potato with a bamboo skewer.

   If it can reach the middle of the potato smoothly, stop the heat.

   Drain the water using a lid or and allow the potatoes to drain.

    Mix in the finely chopped onions while the potatoes are still hot to warm up the onions.

    Add mayonnaise, cheese, salt and pepper and check the taste.

    Mash the avocado with a fork and pour in the lemon juice.

    Add to the potatoes from Step 4 while it is still hot.

    Mix well, check the taste and add more seasoning if needed.

    Add diced tomatoes when the potatoes cool down a little, and it's done.
