Avocado Mousse Salad Recipe

   Halve, pit, and peel avocados; cut into chunks.

   Combine avocado, Spam, lemon juice, lowfat sour cream, salt, and pepper sauce in food processor or possibly blender and process till smooth.

   Soften gelatin in cool water; dissolve over boiling water.

   Stir in avocado mix.

   Divide into eight 1/2-c. molds.

   Chill at least 2 hrs.

   To serve unmold onto lettuce-lined salad plates; garnish with black olives, if you like.

   This recipe yields 8 servings.

   Nice to know: You can make this salad in individual molds or possibly in one 4-c. mold.
