Avenue Bistro Austrian Apple Pancake Recipe

   Heat two Tbsp.

   of the butter and set aside.

   Combine Large eggs, sugar, salt, flour, lowfat milk and melted butter in a bowl, mix well till smooth and pass through a sieve.

   Heat the remaining 4 Tbsp.

   of butter in a 10-inch saute/fry pan.

   When the butter starts to brown lightly add in apple, cinnamon and lemon juice.

   Saute/fry mix till apples are cooked halfway and golden.

   Pour pancake batter over apples.

   Bake pancake in a 550 degrees F oven.

    Apple pancake takes about 12-15 min to cook.

    The pancake should souffle up around the rim of the saute/fry pan and should turn a nice golden.

    Serve with hot syrup and sprinkle with powdered sugar.
