Meatballs:

Take the onion, pepper, garlic,and fresh Basil in a food processor until chopped finley.

In a bowl with the ground meat add the pepper and onion mixture, the spices, cheese, breadcrumbs and egg. If your doing this while cooking the sauce then add a couple of tablespoons of it to the meatball mixture.

Now roll the meatballs into whatever size you like and heat up a pan on medium heat with olive oil or a non stick spray. Cook the meatballs on four sides making them brown on each side. Now place them on a plate and refrigerate for atleast a half hour or until you add them to the sauce.

Now this is important do not add the meatballs to the sauce while hot or they will fall apart they have to be chilled.

In a large pot put around 1/4 cup of Olive Oil on medium heat. Add the 2 pork chops and brown on both sides for about 5 minuts each. Remove the pork chops and add another 1/4 cup of olive oil add in the pepper and onion mixture and cook for 8-10 minutes. Add the tomatoe paste and cook for 1 minute then add the tomatoes.

Now add all the spices, cheese, and wine then stir well. Then throw in the 2 pork chops and then let the pot simmer on low. Cover and let cook for about 1 hour but stir every 10 minuter roughly.

Now after the first hour throw in your sausages and cook for 2 more hours. By this time the pork chops should have fallen apart and thats when you add the meatballs. Then turn off the stove and let rest for about a half hour.

During this time boil a pot of well salted water for the pasta. When you drain the pasta return to the pot you boiled it in add about a tablespoon of butter and a good amout of the sauce and stir until butter melts. Make sure you serve the meat, pasta and sauce in different platters. Now youve worked enough so MANGIA!!!
