Ingredients: 1 medium sweet red pepper, seeded and cut into 1/4-inch rings; 1 medium orange sweet bell pepper or 1 medium green sweet pepper, seeded and cut into 1/4-inch rings; 1 medium red onions or 1 medium yellow onion, halved and sliced thinly; 1 tablespoon olive oil; 8 slices sourdough bread (1/2 - 3/4 inches thick); ¼ cup apple butter (mixed with a pinch of crushed red pepper flakes); ¼ cup honey mustard; 4 slices swiss cheese (3 oz); 4 slices thick-cut bacon, cooked & drained; 4 slices sharp cheddar cheese; 8 -10 ounces sliced cooked turkey breast; 3 tablespoons olive oil
