Preheat oven to 325u00b0F and grease a loaf pan (or 4 mini loaf pans).

In a medium bowl, combine flours, baking powder, baking soda, salt, cinnamon, and nutmeg and whisk to combine thoroughly. Set aside.

In the bowl of a stand mixer, combine applesauce (both amounts), butter and sugar and beat to combine thoroughly. Add egg and yolk to the creamed mixture and beat to combine thoroughly. Beat in vanilla. Turn mixer to low and add the flour mixture, a little at a time, beating until just combined. Stir in apples, walnuts and flax seed.

Scrape batter into the prepared loaf pan (batter will be quite thick) and spread evenly. Sprinkle the top with raw sugar.

Place the loaf pan into the oven and bake until a toothpick inserted into the center comes out clean, about 80-90 minutes (45 minutes for mini loaves). Let cool before serving.
