Preheat oven to 350 degrees F. Line a 12-count muffin pan with paper cups.

Toss apples with a pinch of cinnamon and sugar and set aside.

In a large mixing bowl sift flour, sugar, baking powder, baking soda, salt, cinnamon and ground all spice. Make a well in the flour mixture and add eggs, vegetable oil and vanilla and mix well. Fold in the apples.

Pour mix into muffin pan and fill each liner 2/3 full.

For topping stir together butter, brown sugar, flour and cinnamon and sprinkle on top of muffins.

Bake for 23-27 minutes until tops are golden brown and tester inserted into center comes out clean. Remove from pan and cool on a wire rack.

Reduce apples to 1 cup and add a 1/2 cup of pecans, walnuts or dried cranberries.
