Peel apples and slice very thin (use thinnest blade of food processor). Put in large bowl. Don't worry about the apples turning brown. DO NOT put sliced apples in water to try to avoid browning...this will cause the apples to lose their juice.

Sprinkle lemon juice over the apple slices.

In a separate bowl, mix: sugar, flour, cinnamon. Then mix thoroughly with the sliced apples. Let all this stand while making the pie crusts.

Mound the apple slices high and full (as they will cook down) in the bottom crust. Add nutmeg and 2 Tbsp. butter across top. Then put on top dough. Pinch or tuck edges. Make slits for steam to escape. Make dough decorations (optional). Brush top dough with milk for golden browning.

Bake at 375 degrees; for 25 minutes with edges covered with aluminum foil. Remove foil and continue to bake for 20-25 minutes more. If the edges start to get too brown, put the aluminum foil back on the edges.
