Pre-heat the oven to 80u00b0C/60u00b0C fan assisted/ Gas Mark 1/2.

Place the granulated sugar into a small pan with the water, bring to the boil and boil for 2 minutes. Allow to cool.

Line a baking sheet with baking parchment.

Slice one dessert apple into 12 thin slices and dip into the sugar syrup. Place them on the baking sheet and dry in the oven for approximately 5 hours.

Peel dice and core the cooking apple and the remaining dessert apple.

Place into a pan with the light brown sugar, water and vanilla pod. Cover and allow to simmer for 15 minutes to make the compote. Remove vanilla pod before serving.

Cool the apple chips and set aside until dry.

Place 3 apple chips slightly over lapping onto each dessert plate, top with a spoonful of the apple compote.

Scoop the Carte D'Or Vanilla Ice Cream and place next to the apple chips. Serve sprinkled with cinnamon.
