For the cobbler:

Place chopped apple, 1 cup of sugar and water in a small sauce pan. Bring to a boil, then lower heat and simmer for about 10 minutes. Meanwhile, whisk together remaining sugar, milk, flour and butter until well blended. Spray two small baking dishes, such as a ramekin, with non-stick spray and pour an even amount of batter into each dish. Do not stir. Tap dishes on a hard surface just enough to help it settle and smooth out.

Spoon apples and simple syrup on top of the batter, distributing evenly between the two servings. Still do not stir; the batter will rise to the top while baking. Sprinkle the top of each cobbler with a pinch of sugar. Place ramekins in a larger baking dish filled with about 1/2 inch of water. Bake for 30-45 minutes.

For the cinnamon-vanilla cream:

In a small bowl mix whipped cream, vanilla and cinnamon together until blended well. Top cobblers with whipped cream and serve.
