Apple Cider Rarebit

   Melt butter in a small saucepan over medium heat. Add flour and cook, stirring, for 1 min. Gradually whisk in cider and milk, stirring until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins. Stir in cheese and mustard powder. Season to taste.

   Preheat broiler. Line a baking tray with parchment paper. Arrange bread on tray and top evenly with cheese sauce. Sprinkle with paprika. Broil for 3-4 mins, until bubbling and just beginning to brown. Serve hot with apple slices.
