Preheat oven to 425u00b0F. Grease 2 baking sheets. Stack 4 sheets of pastry and cover the remaining sheets with parchment paper and a damp dish towel. Cut 6 x 4 inch rounds from the stacked pastry sheets. Brush each layer with melted butter. Repeat with remaining sheets to make 18 rounds total.

To assemble, divide apple mixture between the pastry rounds. Fold to enclose the filling, pressing the edges together. Brush tops with remaining butter. Bake about 8 mins or until browned lightly. Serve warm.
