1
Preheat oven to 350 F. Spray two 12-count standard size muffin pans with non-stick spray. You're going to make 16 muffins total with this batter, so do 8 in one pan and 8 in the other for even baking.
2
Pulse oats in a food processor. Continue pulsing until the oats resemble a flour-like texture. Mix together the ground oats, walnuts, chia seeds, baking powder and baking soda in a bowl.
3
Beat the whole eggs and egg white in a separate bowl. Add the yogurt and apple juice. Stir to combine.
4
In a small saucepan over low heat, melt the coconut oil, cinnamon, vanilla extract and honey until it reaches a syrup-like consistency.
5
While that's going on mash your bananas, and chop your apples into small pieces.
6
Add the egg mixture to the oat mixture and stir together. Next add in the coconut oil syrup, apples and bananas and mix well.
7
Pour the batter into muffin tins and bake for 25 minutes or until an inserted toothpick comes out clean. Remove from oven. Let them cool slightly before serving.
