   Line 2 full-size hotel pans with plastic wrap; set aside.

   Brew coffee with water; cool.

   Stir in 3 Tbsp.

   chocolate extract (or stir in 2 tsp.

   Beat cream cheese, marscapone cheese, brown sugar and remaining extract with mixer until light and fluffy.

   Split cakes in half horizontally.

    Arrange 1/2 of the cake pieces in single layer in prepared hotel pans; drizzle with 1/2 of the coffee mixture.

    Cover with 1/2 of the cream cheese mixture.

    Sift 1/2 of the cocoa powder evenly over cream cheese mixture in pan.

    Repeat all layers.

    Refrigerate 2 hours or until chilled.

    Cut dessert in each pan into 20 squares to serve.
