   Beat the whites very stiff.

   When beaten, put in cream of tartar.

   Sift sugar and flour alternately 5 times.

   Fold in sugar first, then flour.

   Bake in cold oven to start, set at 250u00b0, for 15 minutes, then at 300u00b0 for 30 minutes until golden brown.
