AMIEs BECHAMEL Sauce

   Heat milk in a sauce pan and let it boil.

   Remove from heat and set aside to infuse.

   Melt the butter in a medium saucepan over low heat.

   Add the flour, stirring with a wooden spoon for 1 minute

   Add the milk gradually, and mix until smooth.

   Gently simmer over low heat, stirring constantly for 10 minutes until thickened.

   Season with nutmeg, salt and white pepper.

   Cook for another 2 minutes, stirring constantly.

   Taste and adjust the seasoning!
