Preheat oven to 300u00b0F. Mix ground almonds with 1 tbsp sugar, spread out onto a baking sheet lined with parchment paper and bake for 10 mins. Set aside to cool.

For dried meringues, decrease oven temperature to 200u00b0F. Whip egg whites until stiff, sprinkling in 3/4 cup sugar. Fold in toasted almonds and distribute 8 blobs onto a baking sheet lined with parchment paper. Using a small spoon, make a small hole in each blob. Dry meringues for 2-2 1/2 hours.

For coffee cream, bring 2 tbsp sugar and coffee to a boil. Mix coffee liqueur, a little cream and cornstarch until smooth then chill until the mixture swells.

To finish, spread 1 tsp melted chocolate into and over each meringue. Mix cream cheese, remaining heavy cream, and chilled coffee cream then distribute between meringue holes. Serve sprinkled with coffee beans and almonds.
