Meanwhile, heat the oil in a large pan, and briskly fry the drumsticks for about 5 mins. Remove from the pan, then drain on paper towels. Bake the drumsticks in a preheated oven at 350u00b0F for 30-40 mins. Briefly fry the parsley in the hot oil until crispy. Remove from the pan and drain on paper towels.

To make the salsa, mix the ketchup, tomatoes and onion in a bowl and season.
