Ingredients: 4 lb Alligator meat cubed; 1/2 c. Minced celery; 1 c. Flour; 1/2 c. Minced bell pepper; 1 c. Oil; 8 ounce Minced mushrooms - (1 can); 4 Tbsp. Butter; 1 c. Water; 2 med Onions minced; 1 jar Salad olives; 1/2 tsp Sugar; 1/4 c. Minced parsley; 1 can Tomato paste; 1/4 c. Minced scallions Salt to taste Cayenne pepper to taste

Servings: persons

4 lb Alligator meat cubed
1/2 c. Minced celery
1 c. Flour
1/2 c. Minced bell pepper
1 c. Oil
8 ounce Minced mushrooms - (1 can)
4 Tbsp. Butter
1 c. Water
2 med Onions minced
1 jar Salad olives
1/2 tsp Sugar
1/4 c. Minced parsley
1 can Tomato paste
1/4 c. Minced scallions Salt to taste Cayenne pepper to taste

Soak meat with Tabasco and lemon juice for 30 min prior to cooking.

Rinse before cooking.

Make roux with 1 c. oil and 1 c. flour and cook till golden brown.

Saute/fry onions in roux till brown.

Add in tomato paste and sugar and cook about 5 min.

Add in bell pepper, celery, garlic, mushrooms and stir well.

Add in water and cook 1 hour over low heat.

Add in scallions, parsley, alligator (cut in small pcs, and preferably meat other than from the tail) salt, pepper and cayenne to taste.

Cover pot and cook slowly for 30 min or possibly till meat is tender.

Add in olives that have been soaked in water and cook a few min longer.

Serve over cooked rice.
