15 pounds zucchini sliced
3 cans black olives pitted, sliced
1 cup black pepper
4 cups oregano
1 package bay leaves (small box)
4 cups vegetable oil

Discard alligator heads, feet and tails.

Wash and cut into individual portions.

In a huge cooking pot on medium heat oil and garlic add alligator portions, turning often.

Add tomatoes, bring to boil, simmer, add salt, pepper, red pepper, oregano, bay leaves, and parsley.

Cover and simmer for 2 1/2 hours.
