   Bake the sweet potato, reduce it to a puree, and set aside.

   Remove the skin from the sausage, and mix it with a bit of the sweet potato puree.

   With floured hands, form tiny burgers, flattening slightly.

   In a non-stick frying pan with a few splashes of olive oil, fry the burgers until they are a golden hue (4 to 5 minutes).

   Accompany with apple quarters caramelized in a bit of brown sugar, and sweet potato balls made from remaining puree.
