Aha'S Hollandaise Sauce

   Place egg yolks in a blender and beat them. Add butter and lemon juice. Add boiling water. Mix for 60 seconds. Pour mixture into smooth ceramic bowl. Place bowl into saucepan with water in it. Water should not go inside the bowl. Heat the saucepan at medium temperature, stirring the contents of the ceramic bowl gently until the mixture thickens.

   Now if the mixture curdles, try adding a touch of whipping cream. Or Aunt Nettie recommends dropping in an ice cube and continuing to stir until the mixture creams again. At that point, take out the ice cube. The sauce can be frozen and rewarmed, but you may have to deal with the curdles.
