nonstick cooking spray
⅛ cup olive oil
1 tablespoon white wine vinegar
¼ cup green onion
14 red bell pepper
8 ounces taco seasoning
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon pepper
½ cup shredded cheddar cheese

Pre-heat oven to 400 degrees F.

Combine the Simply Potatoes Diced Potatoes with Onion with the Olive Oil and Vinegar in a mixing bowl and mix with a spatula.

Then add the Taco mix, green onions, peppers and spices and mix thoroughly.Coat a 13 x 9 baking sheet with non-stick cooking spray.

Add the potato mixture to the coated baking sheet.

Bake for approximately 30 minutes at 400 degrees F. Add the cheddar cheese on top of the potatoes and bake for additional 5 minutes.
