Fry the entire package of bacon in a frying pan over medium-high heat

Take out of pan and rest on doubled-over paper towel to absorb grease (I use chop sticks to flip and remove the bacon to get some stand-off from the flying grease)

I also clean the skillet between batches of bacon as to not burn the grease

Arrange tater-tots on baking pan and bake in the oven at 425 F for 10 minutes

Pull out and rotate/flip

Bake for another 10 minutes or until golden brown

Add oil to a skillet over medium-high heat and saute onion, garlic and jalapenos until onions are clear (around 5 minutes)

Use the butter to grease a casserole dish (I used an approx 12x6x2 dish)

Place the garlic, onion and jalapeno mixture in the bottom of the dish and evenly distribute

Add baked tater-tots on top and evenly distribute (the denser the more calories!)

Break all 12 eggs into a medium size bowl and whisk in the milk and salt and pepper to taste

Now you can keep the eggs and pan separate and store in the fridge for breakfast tomorrow

If you want to eat immediately - pour the eggs over the other ingredients

Bake covered with tin foil at 350F for 10 minutes

Uncover, remove from oven and sprinkle cheese on top

Bake for another 10-15 minutes or until a golden brown crust has formed

Eat with a vinegar-based hot sauce to balance the flavors
