Season steak with Worcestershire and Montreal steak seasoning and refrigerate for 1 hour.

Remove from fridge 1 hour before cooking so meat cooks evenly.

Now heres the secret to a perfectly BBQd steak.

Heat grill to at least 500 degrees F. My grill has an infrared space and gets really, really hot.

Put steak on grill and sear for about 3-5 minutes.

When you go to turn it, it shouldnt stick.

Turn steak and sear other side for about 3-4 minutes.

Move steak to center of grill and turn off the center burner.

Think MOM: Medium-Off-Medium.

Thats how the grill should be.

With the steak in the center, it wont burn but will cook to medium/rare in about 5 minutes.

Use meat thermometer at first to be certain not to overcook.

Important: when you take the steak off the grill it needs to rest for 7-10 minutes before you cut it so the juices will stay in the steak instead of running onto the plate!

You may need to experiment a bit with your grill to get the timing right, but once youve got it down, youll have a perfect steak every time.
