   Prepare skillet with oil.

   Slice potatoes and fry until brown on both sides.

   Slice bell pepper in strips and blanch until tender.

   Add diced onion.

   Put bell pepper and diced onion in skillet with potatoes.

   Beat eggs and pour over the potatoes, bell pepper and onion until it forms into a pie.

   Salt and pepper and serve.
