Zuni Chicken

   Rinse chicken and dry. Mix all other ingredients together and spread

   all over chicken inside and out.

   Set chick on a rack over a pan in the 'fridge for 24-48 hours.

   Heat oven to 500.

   Place chick in small roasting pan breast side down on a rack. Cook

   for 15 min. Reduce heat to 450. Turn chicken breast side up. Cook

   for 15 min. Reduce heat to 425, baste, cook 30 min or until thermometer

   reads 160.

   Let stand for 15 min.
