Name: Zucchini Bread

Ingredients: 3 c. sifted flour; 2 tsp. soda; 1 tsp. salt; 1/2 tsp. baking powder; 1 1/2 tsp. cinnamon; 3 eggs; 2 c. sugar; 1 c. oil; 2 tsp. vanilla; 3 c. shredded zucchini

Combine dry ingredients and set aside.

Beat eggs lightly in large bowl.

Add sugar, oil and vanilla.

Beat until creamy.

Stir in zucchini and flour mixture; stir only until moistened.

Pour into 2 greased and sugared 9 x 5 x 3-inch loaf pans.

Bake at 350u00b0 for 1 hour or until done.

Cool 10 minutes before removing from pans.
