   1. In a medium saucepan, combine butter, water, sugar, and salt. Bring to a boil.

   2. Take saucepan off heat and add flour. Return saucepan to heat and stir continuously until mixture forms into a ball to cook off flour taste. (3-4min)

   3. Transfer flour mixture into medium bowl, with a hand mixer, whisk dough for about a minute to cool it down. Add eggs, one at a time, incorporating each egg completely before adding the next one. Beat until smooth.

   *Add grated apple. Mix well and set aside.

   4. Pour enough oil in a saucepan (350F). Scoop small balls with 2 spoons and drop carefully into oil (about a tablespoon). Turn balls once or twice, until golden brown. Place onto paper towels to drain access oil.

   5. Toss Zeppole into cinnamon sugar. Serve Immediately.
