Yogurt Lime Oliveoil Muffins

   1 cup 2% yogurt

   1/3 olive oil, or 1/4 cup olive oil plus 2 tbsp. apple sauce

   1 cup raw sugar (replace some with maple sugar or honey as desired)

   zest and juice of 1 lime

   2 eggs

   1 2/3 cup flours (mix of any types-soy, quinoa, wheat germ, oat bran, whole wheat, some ground flax seed)

   1.5 tsp baking soda

   1/4 tsp salt

   1/4 cup chia seeds

    fold in 1 cup frozen blueberries at the end

    Mix dry ingredients into the wet ingredients, all by stirring or whisking gently, aim to combine with minimal mixing. Bake 350 degrees for 20 to 25 minutes for muffins, or 35-40 mins for loaf. Can make a berry sauce to go on top (crush frozen berries with sugar and lime juice, heat, cool, and drizzle on top).
