Yiayia'S Feta Bread

   1. Set the oven at 400 degrees. Spray a 12-cup muffin pan with nonstick cooking spray.

   2. In a small bowl, combine the flour and baking powder. Drain any liquid from the top of the yogurt.

   3. In a large bowl, gently mix the yogurt, eggs, and oil. Fold in the flour mixture, then the feta. Do not overmix. Divide the batter among the indentations.

   4. Bake the muffins for 4 to 5 minutes. Lower the oven temperature to 350 degrees and continue baking for 15 to 20 minutes longer, or until the muffins are golden brown. Serve warm. Adapted from Penelope Kotidis
