1
Preheat your oven to 400 F and spray a large baking dish with a non-stick spray.
-
2
I used a large oval baker but a 9x13 should also work.
-
3
Set aside.
-
4
In a heavy-bottom saucepan, add the butter and melt over medium heat.
-
5
Whisk in the flour and cook until it turns a golden brown color.
-
6
Very slowly, pour in the beer.
-
7
Be careful, as beer is known to bubble over as it heats.
-
8
Continue to whisk for 2-3 minutes and then whisk in the green chile.
-
9
Bring to a low boil and reduce the heat to a simmer, continuing to whisk until the sauce has thickened substantially, about 10 minutes.
-
10
With the heat still set on low, stir in the sour cream, cream cheese, garlic powder and a dash of salt and pepper.
-
11
Stir until smooth and creamy.
-
12
Adjust seasoning to taste and remove from heat.
-
13
Set aside.
-
14
Assemble your enchiladas.
-
15
Start by placing a warm tortilla on a flat surface.
-
16
Add a couple tablespoons of chicken, a couple tablespoons of cheese, and a tablespoon of black beans down the center of the tortilla.
-
17
Tightly roll the enchilada and place, seam side down, into the prepared baking dish.
-
18
Repeat this step for the rest of the tortillas, making sure you have about 1/2 cup of cheese left over for topping later on.
-
19
Top the enchiladas with the sour cream green chile sauce and the remaining shredded cheese.
-
20
Bake the enchiladas for 20-25 minutes or until melted, bubbly and slightly brown.
-
21
Remove from heat and let them stand for 2-3 minutes.
-
22
While your enchiladas are baking, prepare you salsa.
-
23
In a small bowl, combine the pomegranate arils, red onion, cilantro, jalapeno, lime juice, sugar and a dash of salt.
-
24
Mix carefully as to not break up the pomegranate arils.
-
25
Set aside.
-
26
Serve your enchiladas by topping with pomegranate salsa, avocado and cilantro.
-
27
Enjoy immediately!
-
28
Notes: 1.
-
29
The enchiladas may be made ahead of time and chilled.
-
30
Just follow all of the steps up until the baking part.
-
31
Cover tightly and place in the fridge for up to 24 hours.
-
32
When you go to bake, follow the directions as is, starting with the baking step.
-
33
2.
-
34
An IPA will have a strong bitter flavor.
-
35
If you would like to tone this down, feel free to use a pale ale or pilsner.
