White Galician Cake (Bica)

   Pre-heat the oven to 180C.

   Grease a cake pan (20 cm x 22 cm) with butter.

   Line with parchment paper and grease again.

   Whisk the egg whites until stiff, adding the sugar a little at a time, to form a firm meringue.

   Slowly add the flour gradually and set aside.

   Whip the cream and gently fold into the mixture.

   Pour the mixture into the cake pan and smooth over the surface.

   Sprinkle with plenty of sugar.

   Cook for 40 minutes or until a skewer inserted in the center comes out clean.

    Leave to cool on a cooling rack and then serve.
